The mission of FSMEC is to advocate for foodservice and dietetic management education, research, and practice and support members in teaching and research efforts.

The College and University Institution Management Faculty Council was established in 1962 with the objective of improving the quality of education in foodservice administration/institution management. With initial support from the American Home Economics Association (now American Association of Family and Consumer Sciences) and the American Dietetic Association, the Council met in 1962 and 1963 and biennially thereafter. Since 1967 the Council has been self-supported by membership fees, conference registration, and sales of Proceedings. The name of the Council was changed in 1973 to the Foodservice Systems Management Education Council.
