The Journal of Foodservice Management and Education
Author Guidelines

Purpose

The purpose of the Journal of Foodservice Management and Education is for sharing the results of original work undertaken by college and university faculty, foodservice management professionals, and others with research interest in the onsite foodservice industry. The Journal serves as a primary means for disseminating research results and other scholarly work to the National Association of College and University Food Services and Foodservice Systems Management Education Council membership. The Journal is published yearly on the NACUFS (www.nacufs.org) and FSMEC (www.fsmec.org) web sites.

Scope of Articles

Scholarly articles should address significant issues in the foodservice field for foodservice management professionals and faculty who teach foodservice courses and conduct foodservice research.

Original Articles Only

Submission of a manuscript certifies that it is an original work, and that neither this manuscript nor a version of it has been published elsewhere or is being considered for publication elsewhere.

Manuscript Length

The Journal publishes articles of any length. Those longer than 5,000 words (15-23 pages double-spaced) will be considered at the discretion of the editor, who may recommend division into sections for publication in successive Journal issues.

Manuscript Style

References, citations, and general style of manuscripts for the Journal should follow the APA style outlined in the latest edition of the Publication Manual of the American Psychological Association.

Use “I” or “we” when referring to your own actions. For example, do not write, “The researcher instructed the trainees….”; rather , write, “I instructed the trainees…”

If you wish to submit a paper that has already been prepared in another style, you may do so. However, if the paper is accepted (with or without reviewer’s alterations), you will be responsible for resubmitting the manuscript in the correct style. Neither the editor or the publisher is responsible for re-preparing manuscript copy to adhere to the Journal’s style.

Manuscript Preparation– Research Articles

Manuscripts reporting original research should be submitted electronically. Using Word 8.0 or WordPerfect 10.0 or higher, submit materials to the Journal editor as an email file attachment. Include in the file attachment:

1. Cover page with title and abstract of 100 words or less, and 3-5 keywords.

2. Second title page with including names of all authors, their academic degrees, professional titles, affiliations, contact address (including email address) of corresponding author, and acknowledgement of research support or other credit.

3. Assignment of copyright, to be signed by all authors and faxed to the editor. The statement of copyright to use is located at the end of manuscript guidelines.

4. Statement of authorship, to be signed by all authors and faxed to the editor. The statement of authorship to use is located at the end of manuscript guidelines.

5. Body of text composed of the following sections:

Introduction, which includes a statement of the purpose and objectives of the research

Methods, which includes a description of the research design, research instrument or intervention used, and statistical analyses conducted

Results and Discussion

Conclusions and Applications

References

Manuscript Preparation– Applied Solutions

These manuscripts are descriptions of challenges confronting practitioners and the steps taken to resolve the issue. Articles in this section are not research based, but instead are descriptive reports. Using Word 8.0 or WordPerfect 10.0 or higher, submit materials to the Journal editor as an email file attachment. Include in the file attachment:

1. Cover page with title and abstract of 100 words or less, and 3-5 keywords.

2. Second title page with including names of all authors, their academic degrees, professional titles, affiliations, contact address (including email address) of corresponding author, and acknowledgement of research support or other credit.

Manuscript Preparation – Teaching Foodservice

Manuscripts for this section will focus on improving and advancing foodservice education. Faculty, preceptors, internship coordinators, interns, and students are encouraged to submit manuscripts that describe innovative projects, programs, coursework, and experiences associated with pedagogical aspects of foodservice education. Research reports and quantitative studies that evaluate effectiveness of projects or courses should be submitted as Research articles.

Teaching – these articles are descriptions of projects or coursework developed to enhance learning opportunities for students in hospitality/dietetics programs.

Student Reports – student internship reports should briefly describe their major activities or responsibilities during the internship, an evaluation of their preparedness for the experience, and constructive recommendations on how to improve the experience.

Spelling, Grammar, Punctuation, and Inconsistencies

You are responsible for providing a manuscript copy that is clearly written and that contains no errors of spelling, grammar, or punctuation. Neither the editor nor the web site is responsible for correcting errors of spelling and grammar. The APA punctuation manual gives explicit instruction on punctuation, spelling, abbreviations, statistical formulae, etc. Check your paper for the following common errors:

Dangling modifiers

Misplaced modifiers

Unclear antecedents

Incorrect or inconsistent abbreviations

Also, check the accuracy of all arithmetic calculations, statistics, numerical data, text citations, and references. All cited references must be given in full, including volume, issue, and page numbers. Inconsistencies must be avoided. Be sure you are consistent in your use of abbreviations and terminology, and in citing references from one part of your paper to another.

Preparation of Tables, Figures, and Illustrations

All tables, figures, illustrations, etc must be ready to use as submitted. Each type should be labeled sequentially within its category, such as Table 1, Figure 1, Illustration 1. The titles should be descriptive so that they can “stand alone” without text.

Alterations Required by Referees

A manuscript may be accepted by the editor contingent upon changes that are suggested by anonymous referees. If the editor returns your manuscript for revision, the author(s) are responsible for revising the manuscript taking into account the reviewer’s and editor’s comments. A response to reviewers’ and editors’ comments should be submitted with the revised manuscript electronically to the editor. The manuscript must be resubmitted for the complete review process if the revised copy is not returned within six months from date of return to author.

Typesetting

You will not receive proofs of your article. Editorial revisions, if any, must therefore be made while your article is still in manuscript. The final version of the manuscript will be the version you see published. Authors are expected to submit manuscripts that are free from error.

References

Use the author-date system for references in the text. References should be single spaced. The reference list should be alphabetized by the author’s last name. Use endnotes for related information rather than documentation of references. The author assumes responsibility for the accuracy of references.

Quotations

Direct quotations must, of course, conform to the original. Summaries or paraphrasing of ideas from outside sources should also be documented. Obtaining permission is the author’s responsibility.

Assignment of Copyright

A copy of the following statement with signatures and dates from all authors must be faxed to the editor at time of submission:

The authors(s) undersigned hereby transfer(s), assign(s), or otherwise convey(s) all copyright ownership to the Journal of Foodservice Management and Education in the event that such work is published by the Journal in any form or medium. Authors will be required to acknowledge and credit the Journal in all reprints. Photocopy or fax signatures are legally binding.

Statement of Authorship

A copy of the following statement with signatures and dates from all authors must be faxed to the editor at time of submission:

We (or I) certify that we (I) have participated substantially in the conception and design of this work and the analysis of the data (when applicable) as well as the writing of the manuscript. We have reviewed the final version of the manuscript, approve it for publication, and take responsibility for its content. Neither this manuscript nor one with substantially similar content under our authorhip has been published or is being considered for publication elsewhere, except as an abstract. Photocopy and fax signatures are legally binding.
